We've heard this many times: "I don't drink Chardonnay, I drink Chablis" or various versions of it. And to an extent the sentiment is true; there's nothing quite like wine from Chablis. The 'shells and rock' quality (mineral + salty/savory), the quality/price ratio (very fair), and the versatility of the wine (pairs with oysters just as perfectly as with roasted chicken). This wine is prime.

The nose is shy yet expressive, with prominent notes of raspberry and wild strawberry, complemented by floral hints (violet, rose, etc). There are also subtle undertones of spice and hints of licorice and undergrowth (not exactly like the 'Burgundian' forest floor but close) as the wine evolves.
