Morey-Coffinet
was founded in the late 1970s by
Michel Morey (son of the late
Marc Morey) and his wife Fabienne (from the
Pillot clan). Their son, Thibault, succeeded the
couple, taking the helm of the
estate in 2009. Thibault joined his
father in a long lineage of
winemakers in Chassagne-Montrachet with
great gravitas in their family names such
as Pillot, Morey, and Coffinet. He has earned
the respect of his peers through his thoughtful and
detailed approach. In 2014, he began to
pursue biodynamic viticulture, and in 2015
gained certification.
Thibault’s 2022s are a marvel, walking the fine line
between lusciousness, lovely reductive qualities and
a powdery chalkiness that elevates the wine, showing
great depth and complexity. With his organic
certification, the wines are now reaching the
pinnacle of their appellations; refined, with
gorgeous aromatics and texture.
Here in the Côte de Beaune, Thibault
crafts wines that are nothing less than profound.

heirloom apples (Arkansas black for tannin, Granny
Smith for acidity and Pippin for balance), and 20%
Prickly Pears, hand-harvested from Ballard township
in Santa Barbara County, CA.
Light and refreshing, this will prime your palate.
Killer as a starter with appetizers or as a mid-meal
palate cleanser. Lower in alcohol and free of added
sulfur, this organic pink sparkler is your go-to on
