Brut Blanc de Blancs NV $58
Brimming with pear, white peach and citrus fruit this
enchanting Blanc de Blancs is so bright and succulent
and is very hard to resist. I love the very long, silky
and clean finish which has beautiful balance. Really
fine mousse.
Philipponnat Royale Reserve Brut NV $36
Royale Réserve Brut is the purest expression of the
House’s style… Full-bodied, generous and long. A poised
Champagne that shows impeccable balance, integrating a
delicate frame of acidity. Reveals a chalky note that
lingers on the satiny finish. Pinot Noir, Chardonnay and
Pinot Meunier.
Pol Roger Brut Reserve NV $38
Richly biscuity on the nose, with steamed rice, fresh
pear and citrus blossom complexity. Creamy mousse
dissolves into red apple peel, lemon and stone fruits,
with a depth of honeyed biscuits. The Reserve NV from
Pol Roger is a blend of base wines from at least three
vintages. With 6 months of post-disgorgement ageing, the
wine is ready to enjoy now.
Paul Bara Brut Rose NV $42
The village of Bouzy and Champagne Paul Bara are
practically synonymous. As the published village
historian, Paul is indelibly linked to the lore of his
hometown. Many call him their most renowned
producer. The NV Brut Grand Rosé is fabulous.
Bright and punchy, the Rosé fleshes out beautifully in
the mid-palate and into the finish as the Pinot gains
volume. The Grand Rosé has enough charm to drink well as
an aperitif, but there is serious depth here too. The
Grand Rosé is simply impeccable from start to finish.
More importantly, it is absolutely delicious.
Billecart-Salmon Brut Rose NV $60
This mouthwatering rosé Champagne shows lacy texture and
precise balance, with the well-honed acidity deftly knit
to the subtle, chalky minerality and delicate range of
nectarine, white cherry, slivered almond and pickled

Bright and citrusy, this finely knit Champagne layers a
racy streak of acidity and satiny texture with an
expressive range of wild cherry, blood orange granita,

J. Lassalle Premier Cru Brut Reserve 'Cachet
d'Or' $45
Jules Lassalle established this family-owned Champagne
house in 1942 in the village of Chigny-Les-Roses on the
Montagne de Reims. A master of his craft, he established
a signature style of elegant, tightly knit wines with a
certain ampleur. When he passed away in 1982 his wife,
Olga, and their daughter, Chantal, took over the estate,
upholding Jules’ high standards and progressively
pushing the domaine to the next level. In 2006 Chantal’s
daughter, Angéline Templier, joined the estate as
winemaker. These tough, hardworking women continue to
follow vinification methods established by Jules in the
forties. Their 28-year tradition of “une femme, un
esprit, un style” (one woman, one spirit, one style)
holds true today more than ever. "There's an
open-knit, almost airy feel to this vibrant Champagne,
which carries a concentrated range of juicy pear and
black raspberry fruit, with hints of crystallized honey.
Shows gingersnap biscuit and verbena flavors on the
chalky texture, gaining momentum on the racy, zesty
finish."

oyster shell notes supporting flavors of Asian pear,
star fruit and candied lemon peel as they ride the

Bruno Paillard Brut Premiere Cuvée $64
Talk about balance: Clean and streamlined yet lively and
zesty, this pinpricked bubbly’s got it. Yeasty aromas
quickly make room for scents of tarte tatin, almond, and
ripe Bosc pear, the latter of which carries over to the
palate amid the ribbons of lemon zest and oyster-shell
minerality that define the finish.
Lilbert-Fils Grand Cru Blanc de Blancs Brut $78
The written record has the Lilbert family cultivating
vines around Champagne's hilltop village of Cramant
starts in 1746, and it’s probably a fair bet that they
were there sometime before that (the oldest part of
their 23-foot-deep cellar dates from 1712). The record
further shows that as early as 1907 the family bottled
its own wine for commercial sale. Despite such
longevity, the house of Lilbert is tiny: it farms a mere
3.5 hectares of vines (this figure translates into 8.6
acres. Bertrand Lilbert and his father Georges make only
Grand Cru Blanc de Blancs from 100% Chardonnay. Their
annual production averages 2,300 twelve-pack cases. To
put this in perspective, the house of Moët & Chandon
pumps out 25 million cases each year. The house style
emphasizes fine mousse and fragrant aromas of lime,
yellow orchard fruits, and hay. These are beautiful
expressions of intensely mineral, chalky Chardonnay,
with gorgeously rich Cramant fruit wrapped in elegance
and nuance. This graceful Champagne is like the
finely tailored suit that somehow never goes out of
style, with a lovely overtone of minerally chalk and
brine enticing you into the glass, where flavors of
apricot and Marcona almond, and hints of passionfruit
coulis and pickled ginger, ride the fine, satinlike
mousse.
Pierre Paillard Grand Cru Rosé Extra Brut Les
Terres Roses $78
A serious, elegant rosé Champagne with a creamy, toasty
nose. It's full and voluptuous in the mouth, with rich
buttery brioche characters. As the palate evolves, the
wine's freshness comes through, sweeping in with lemon
and grapefruit and underpinning that cherry and almond
frangipane richness with tense power. A light hint of
Battenberg cake emerges on the finish. In the Bouzy
terroir, well known for exceptional Pinot Noir, brothers
Antoine and Quentin actually have put a lot of focus
into the health of their soils, and they farm
organically. This wine subtle and almost haunting,
and it goes very, very well with shellfish. If you are a
fan of rosé Champagne with lobster, you have found your
perfect bottle!
Chartogne-Taillet Champagne Le Rosé $88
Pliant, bold and resonant, with striking depth and
exceptional balance, Le Rosé is just stunning in this
tasting. Bright red berry fruit, blood orange, mint and
rosewater envelop the palate in a deep, resonant
Champagne that delivers the goods. Big time.
